Doug's easy Thai recipes

Sometime very early in 2000, due to the paucity of decent Thai restaurants near where I lived, I got inspired to try making my own Thai food. The results were mixed, and some of my early attempts were barely-edible disasters, but eventually (after much trial and error) I came up with a few recipes that I think are pretty good. I include here a few that I've refined.

I cook these recipes on a regular basis (although not as often as I used to), and constantly tinker with the details as I go. Some of these recipes are slightly different than the ones I usually make (I tend to like things hotter than is entirely -- well, remotely -- reasonable), but I have made these recipes as posted, and have found them fairly decent. I also use these recipes as a basis for new experiments.


Thai red curry with beef

Or: a decent faux gaeng panang nua.

Thai chicken and coconut soup

Or: a decent faux tom kha gai.

Thai green curry with chicken

Or: er, ah, I dunno what the Thai name of this would be.

Spicy beef with cashews

A relatively basic stir-fry (but good).

Ginger chicken with honey

Another basic stir-fry (but also good).

Spicy pork

A token recipe for the other white meat.
 

Additional notes:

All about jasmine rice, the only proper rice to eat with Thai food.
