Doug's easy cheesecake recipes

Sometime in late 1998, I was looking for my recipes for pumpkin cheesecake. I'd had a couple recipes, but during my move from Houston to Colorado, I'd lost them. So, I decided to make one up. It wasn't very hard, and the result was good, so I kept the recipe, and I've been using it ever since. Of course, I got bored making pumpkin cheesecakes all the time, so I decided to try other things, and when those experiments worked, I recorded them. Maybe someday I'll stick a couple up here, but in the meantime, there's just the one.

I don't make my own cheesecake crusts, I use the pre-made 10" graham cracker pie crusts that are available in most supermarkets. You can always make your own if you're feeling adventurous. Me, I'm too lazy.
